Long ago, inspired by the legend of a monk in Chatan who was known for his virtuous character and was beloved by the people, "Chatan Elder" was named. Additionally, "Ipponmatsu" was named after the Ryukyu play "The Lone Pine on the Hill," which is set in the local area of Chatan Town, where the distillery is located.
The brewing process at Chatan Choro Brewery is based on the careful preparation of Awamori that follows the production methods handed down from generation to generation, with gentle care as if dealing with people, and the Awamori made with love is characterized by its gorgeous and elegant aroma and smooth taste.
Due to being produced by just a few family members and staff, the annual production volume is limited. Until a while ago, it was only sold in Chatan Town and some surrounding areas. However, through word-of-mouth from Awamori enthusiasts and local residents, it has gained nationwide recognition. Today, it is known throughout the prefecture and the entire country as a delicious island sake.
The Chatan Choro Sake Brewery, the manufacturer, was founded in 1848 during the Ryukyu Kingdom era in Shuri Akadamachi. In 1910, it moved to Kuwae in this town and resumed operations in the 1940s after World War II. In 2006, the company name was changed from "Tamanaha Sake Brewery" to "Chatan Choro Sake Brewery," and in 2012, it became "Chatan Choro Sake Brewery Co., Ltd." Chatan Choro is well-known among the townspeople and has many fans both inside and outside the prefecture due to its mellow taste. Although the brewery is small and cannot produce large quantities, they continue to set a limited shipment number to ensure they can provide good sake that customers can trust.
